I can't make pizza.

I've tried. It's always bad.
I've spent days letting dough proof in the fridge. I've used fancy 00 flour. The crust is always tough, dense, and limp. It ends up dehydrated more than baked. No light chewiness or dark crust. It stays light and just gets dryer the longer or hotter I make the oven.
I've tried all the ratios, doing it by weight, by hydration %, all that.
I'm tempted to say its just my oven. It only goes to 500 and I'm not sure it really keeps a constant temp over 450.
But today I tried again. I don't know why.
I used store bought dough which helped with structure. It didn't totally dry out and areas that did kept a decent cracker crunch consistency.
I go as thin as possible. Oil underneath.
I have the same issues with cookies and cakes in this oven. The cookies will still be light but start to dry out. The fan isn't on or anything.
When our microwave dies it might be time to upgrade the whole section of that wall.
Dominos is cheaper than a new oven and an entire pizza is 8 bucks.
